Shrimp Scampi

Less than 30 minutes and dinner is on the table!



Shrimp Scampi

*8 oz. uncooked fettuccine
*2 Tbsp margarine or butter
*1 Tbsp olive or vegetable oil
*4 garlic cloves, minced
*1 lb. shelled deveined uncooked medium shrimp
*1/4 cup chopped fresh parsley
*2 teas grated lemon peel
*1/4 teas salt
*1/4 teas pepper
*1/3 cup dry white wine or chicken broth

1.  Cook fettuccine to desired doneness as directed on package.  Drain, cover to keep warm.

2.  Meanwhile, melt margarine with oil in medium skillet over medium heat.  Add garlic, cook and stir 1 minute.  Add shrimp, cook and stir 1 minute.

3.  Add all remaining ingredients; cook and stir 1 to 2 minutes or until shrimp turn pink.  Serve shrimp mixture over fettuccine.

Garlic-Lover's Shrimp

Recipe from "Weight Watchers Magazine, Cream of the Crop" 1999 edition

Ingredients:

*1 Tbsp olive oil
*1/4 teas crushed red pepper (Omitted due to the kids)
*8 Garlic cloves, minced
*1 Bay leaf
*1 1/2 pounds large shrimp, deveined and peeled
*1/4 teas salt
*1/2 cup dry white wine
*2 Tbsp minced parsley, fresh
*1/4 teas thyme, dried

Directions:

*Heat oil in a large nonstick skillet over medium-high heat.  Add pepper, garlic, and bay leaf; saute 30 seconds.  Add shrimp and salt; saute 3 minutes.  Remove shrimp from skillet; set aside.  Add wine, parsley, and thyme to skillet; bring to a boil, and cook until reduced to 1/4 cup (about 1 minute).  Return shrimp to skillet; toss to coat.
*Discard bay leaf

Weight Watchers: 4 pts
Yield: 4 Servings

Baked Shrimp in Lemony Garlic Sauce



Ingredients:

*1 1/4 pound(s) shrimp, peeled and deveined
*1 spray cooking spray
*1/4 cup(s) fresh lemon juice
*2 Tbsp light butter, melted
*3 medium garlic clove(s), minced
*1 tsp Worcestershire sauce
*3/4 lemon pepper seasoning
*1/4 tsp ground red pepper (optional)
*2 Tbsp parsley, chopped

Instructions:

*Preheat oven to 425 degrees
*Arrange shrimp in a single layer in a 13x9 baking dish coated with cooking spray.
*Combine lemon juice, butter, garlic, worcestershire sauce, lemon pepper and optional ground red pepper in a bowl and pour over shrimp.
*Bake at 425 for 8-10 minutes or until shrimp are done. 
*Sprinkle parsley over shrimp and serve immediately.

Yield: 4 Servings (Serving Size: 3oz, 2 Tbsp sauce)
