Bourbon-Glazed Salmon

I love the Bourbon Salmon from Publix, but it can get pretty pricey at $6.99 per fillet, so I was on the hunt for a good recipe that I could duplicate at home for much less.  I found this recipe from Cooking Light magazine and it came to just at $3.25 per fillet.  It is really good and worth making.  This makes 8 servings but I cut it down to just 2.

Bourbon-Glazed Salmon

Ingredients
  • 1  cup  packed brown sugar
  • 6  tablespoons  bourbon
  • 1/4  cup  low-sodium soy sauce
  • 2  tablespoons  fresh lime juice
  • 2  teaspoons  grated peeled fresh ginger
  • 1/2  teaspoon  salt
  • 1/4  teaspoon  freshly ground black pepper
  • 2  garlic cloves, crushed
  • 8  (6-ounce) salmon fillets (about 1 inch thick)
  • Cooking spray
  • 4  teaspoons  sesame seeds (optional) 
  • 1/2  cup  thinly sliced green onions
Preparation

Combine the first 8 ingredients in a large zip-top plastic bag; add salmon fillets. Seal bag, and marinate in refrigerator 30 minutes, turning bag once. Remove fillets from bag; discard marinade.
Preheat broiler.
Place fillets on broiler pan coated with cooking spray. Broil 11 minutes or until fish flakes easily when tested with a fork. Sprinkle each fillet with 1/2 teaspoon sesame seeds and 1 tablespoon onions.

Week 1-Nutrisystem

Yes, I've been away from my blog for a while with every day crazy, kid things and the Thanksgiving holidays!  I'm happy to be back!  YAY!

I just finished up my first week on Nutrisystem. I have lost exactly 4lbs in that one week and I'm extremely happy with the results.  I've tried Jenny Craig and Weight Watchers and figured..what the hell why not Nutrisystem!  I can give this diet TWO very big THUMBS UP!  All the prepacked food I ate this week was very good.  I'm looking forward to Week 2 starting tomorrow!  Whooo Hoooo!

Weekly Menu: 11/12-11/18

I am so excited to be cooking new recipes this week!  Last week if you all remember, I was doing a pantry/freezer clear out and saving the grocery budget for our vacation set for January.  I had minor complaints from my husband about the menu last week, but somehow he made it through!  My husband really is spoiled rotten when it comes to me cooking new and exciting meals each night! ;)

Day 12 → Something you never get compliments on

Hmmmmm...something I never get compliments on...let's see....I really can't think of anything right now other then my hair?  LOL!  I know, lame.  Really, though..I never get compliments on my hair!  Maybe it's because it's just perfectly straight, with no style!  That's right people..I do NOT style my hair at all.  I wash it, and let it air dry, I don't even brush it!  Now, that I just typed all that, that's probably the reason I NEVER get compliments on my hair.

You know there's this saying: 

"There's the woman that has perfect hair, make-up and is perfectly dressed, and then there is a woman with kids!"  I'm that woman with kids! ;)

Day 11 → Something people seem to compliment you the most on.

The one thing that people compliment me on the most are my big brown eyes and my smile.  It has not always been that way with my eyes.  My sister used to tease me about my big brown eyes by saying I had "cow eyes!"  Ugh, so hateful of my big beautiful eyes!! :)  Now, secretly she wishes she had my eyes instead of her tiny, greenish-hazel eyes!

People say I have a bright, big smile.  I get that from my Dad, cheery and friendly...easy to approach!

Mexican Stuffed Shells

When I saw this recipe in the cookbook, I was a little reluctant.  It sounded strange.  I like your usual Stuffed Shells; mozzarella, ricotta, and Parmesan cheeses.  This one just sounded strange, but I was willing to take the risk and make them.

I WAS SO HAPPY I DID! VERY, VERY GOOD!!

Recipe from:  Taste of Home: Everyday Light Meals
(Yes, it seems that I cook a ton of recipes out of this cookbook.  When my mother-in-law passed away in February, I was lucky enough to receive all her 50+ cookbooks, so I'm picking one or two different ones a week and cook from them.  It's very neat because her handwriting is all throughout these books with recipes she's made and changed.  On the note of my mother-in-law, I have to say HAPPY BIRTHDAY CATHY!  Today would have been her 62nd Birthday, she is deeply loved and missed!)

Ingredients:

*24 uncooked jumbo pasta shells
*1 pound lean ground beef
*2 cups salsa
*1 can (8oz) tomato sauce
*1 cup frozen corn
*1/2 cup canned black beans, rinsed and drained
*1 cup (4oz) shredded reduced-fat Mexican cheese blend or cheddar cheese

TOPPINGS:
*8 Tbsp reduced-fat sour cream
*8 Tbsp salsa
*1/4 cup sliced ripe olives
*1/4 cup sliced green onions

Directions:

1. Cook pasta shells according to package directions; drain.

2. In a nonstick skillet, cook beef over medium heat until no longer pink; drain.  Stir in the salsa, tomato sauce, corn and beans.  Spoon into pasta shells.

3. Place in a 13x9 baking dish coated with nonstick cooking spray.  Sprinkle with cheese.  Cover and bake at 350 degrees for 25-30 minutes or until heated through.  Top with sour cream, salsa, olives and onions.

30 Days of Truth-Day 10

Day 10 → Someone you need to let go, or wish you didn’t know

Jey told me today that I am an "adapter."  I didn't know exactly what he meant by that, so after his explanation, I realized that yes...I am an adapter.  He says that I adapt well to other people, even if they don't necessarily choose to adapt to my circumstances.  Needless to say, I am a push-over....I adapt extremely well in my friendships for fear that they could end if I didn't, but usually in the end I'm the one who has changed my plans and way of doing things to accommodate them. 

I need to let go of people that are not adapters in the relationships that I have and it's a constant one-way street.  I have realized that a true friendship and relationship takes two adapters, not just the one that constantly is giving to make the friendship work.  It's a give and give type of thing, right?!

Creamy Noodles

These are amazing!!

Ingredients:

*8oz uncooked thin spaghetti
*3 garlic cloves, minced
*3 Tbsp butter, divided
*6oz fat-free cream cheese, cubed
*3 Tbsp reduced-fat sour cream
*3 Tbsp fat-free milk
*3/4 teas salt
*1/2 teas onion powder
*1/4 teas Cajun seasoning
*1/4 teas white pepper
*4-1/2 teas minced fresh parsley

Directions:

1. Cook the spaghetti according to package directions.

2. Meanwhile, in a saucepan, saute garlic in 1 Tbsp butter until tender.  Add the cream cheese, sour cream, milk, salt, onion powder, Cajun seasoning, pepper and remaining butter.

3. Cook and stir over low heat just until smooth (DO NOT BOIL).  Remove from heat.

4. Drain spaghetti; toss with cream sauce, sprinkle with parsley and serve immediately.

Weight Watchers: 5 POINTS
Serving Size: 1 Cup

Tasty Italian Chicken

Recipe from: Taste of Home: Everyday Light Meals

Ingredients:

*1/2 cup chopped onion
*1-1/8 teas paprika, divided
*3 teas olive oil, divided
*1-1/4 cups water
*1/4 cup tomato paste
*1 bay leaf
*1/2 teas reduced-sodium chicken bouillon granules
*1/2 teas Italian Seasoning
*1/4 cup all-purpose flour
                                 *1-1/2 teas grated Parmesan cheese
                                 *1/2 teas salt
                                 *1/4 teas garlic powder
                                 *1/4 teas dried oregano
                                 *1-1/2 pounds chicken tenderloins (I used boneless, skinless chicken breasts)


Directions:

1. In a small saucepan, saute onion and 1/8 teas paprika in 1 teas oil until tender.  Stir in the water, tomato paste, bay leaf, bouillon and Italian Seasoning.  Bring to a boil.  Reduce heat; simmer, uncovered, for 10 minutes.

2. Meanwhile, in a large resealable plastic bag, combine the flour, Parmesan cheese, salt, garlic powder, oregano and remaining paprika.  Add chicken; seal bag and shake to coat.

3. In a large nonstick skillet coated with nonstick cooking spray, cook chicken in 1 teas oil 2-3 minutes on each side or until juices run clear.  Remove and keep warm; repeat with remaining chicken and oil.  Discard bay leaf from sauce.  Serve over chicken.

Weight Watchers: 3 POINTS
Serving Size: 4oz chicken breast or 4oz worth of tenderloins which is really about 2.

Ultimate Chicken Sandwiches



Recipe from:  Taste of Home; Everyday Light Meals

First thing, this cookbook is amazing, and has a ton of healthy and delicious recipes!  I've been using it a lot since I got it from my MIL's house.  This is a great recipe, tastes like a fried chicken sandwich and is only 7 Weight Watcher points including the onion sandwich roll!!!

Ingredients:

*6 boneless skinless chicken breast halves
*1 cup buttermilk
*1/2 cup reduced-fat biscuit/baking mix
*1/2 cup cornmeal
*1-1/2 teas paprika
*3/4 teas salt
*3/4 teas poultry seasoning
*1/2 teas garlic powder
                                  *1/2 teas pepper
                                  *1/4 teas cayenne pepper
                                  *6 onion or kaiser rolls, split
I'm a plain chicken sandwich kind of girl, but lettuce and tomato is recommended as a topping!
                                 
Directions:

1. Pound chicken to 1/2-in. thickness.  Pour buttermilk into a large resealable plastic; add chicken.  Seal bag and turn to coat; refrigerate for 8 hours or overnight.

2. In a shallow bowl, combine the biscuit mix, cornmeal, paprika, salt, poultry seasoning, garlic powder, pepper and cayenne.  Remove chicken one piece at a time, allowing excess buttermilk to drain off.  Discard buttermilk.  Coast chicken with cornmeal mixture; place in a 13in x 9in baking dish coated with nonstick cooking spray.

3. Bake, uncovered, at 400 degrees for 12 minutes.  Turn chicken.  Bake 8-12 minutes longer or until juices run clear and coating is lightly browned.  Serve on rolls with lettuce and tomato if you choose.

30 Days of Truth-Day 9

Day 09 → Someone you didn’t want to let go, but just drifted.


This one is going to be someone that I didn't want to let go, but just drifted and then we've re-drifted back to each other! :)

We met our freshman year in High School, I invited her to lunch with me and my friends and we immediately hit it off.  We had a strong friendship throughout High School and then I moved to Georgia and she moved to Kentucky.  We would randomly chat via email, and soon the emails began to become more and more scarce.  When we did talk, I realized that she wasn't the same person I used to know...the road and people she was befriending made me uneasy and her life was going in a different direction then the one I was headed in.  I began to pull back because I realized that I was moving away from the partying lifestyle, and our commonalities were no longer there.  So we drifted...and drifted...so far that we went months without talking.  It hurt to think that my once BFF was gone.

A few months back we started talking again, I'm happy to say that she has made big changes in the last year,  and I'm extremely proud of her accomplishments and the changes she has made to better her life. 

My BFF is back with her usual self and I'm so glad she's back in my life! I love you Tray!!

Cheesy Pasta Lasagna

Using a different pasta then the usual lasagna noodles gives traditional lasagna a tantalizing twist and the kids love the shaped pasta!



Recipe from: Taste of Home-Everyday Light Meals

Ingredients:

*1 pound lean ground beef
*2 medium onions, chopped
*1 garlic clove, minced
*1 can (14oz) diced tomatoes
*1 jar (14oz) meatless spaghetti sauce
*1 can (4oz) mushrooms, undrained --I used 1/2 carton of fresh mushrooms
*8oz uncooked pasta (any type)
*2 cups reduced-fat sour cream
*11 slices reduced-fat provolone cheese
*1 cup shredded part-skim mozzarella cheese

Directions:

1. In a nonstick skillet, cook the beef, onions and garlic over medium heat until meat is no longer pink; drain.  Stir in the tomatoes, spaghetti sauce and mushrooms.  Bring to a boil.  Reduce heat; simmer, uncovered, for 20 minutes.  Meanwhile, cook pasta according to package directions; drain.

2. Place half of the pasta in an ungreased 13in x 9 in baking dish.  Top with half of the meat sauce, sour cream and provolone cheese.  Repeat layers.  Sprinkle with mozzarella cheese.

3. Cover and bake at 350 degrees for 35-40 minutes longer or until the cheese begins to brown.  Let stand for 10 minutes before cutting.

Chicken Florentine

Florentine in a recipe title means the dish features spinach, but you could also make this with kale, broccoli rabe, escarole or other greens.  This is a family friendly dish!




Recipe from: Weight Watchers Success

Ingredients:

*2 teas olive oil
*4 (3oz) thin-sliced skinless chicken breasts
*1/2 teas salt
*1/4 teas pepper
*1 small onion, thinly sliced
*1 (10oz) bag triple-washed spinach, cleaned
*1/4 cup white wine or chicken broth
*1/4 cup shredded reduced-fat Jarlsberg or Swiss cheese

Directions:

1. In a large nonstick skillet, heat the oil.  Saute the chicken until golden brown, about 3 minutes.  Turn over adn sprinkle with 1/4 teas of the salt and 1/8 teas of the pepper; saute until cooked through, about 3 minutes.  Transfer the chicken to a plate.

2. In the skillet, saute the onion until tender, about 3 minutes.  Add the spinach, in batches if necessary; cook, stirring, until wilted, about 2 minutes.  Add the wine; cook until most of the liquid evaporates, about 1 minute.  Return the chicken to the skillet; sprinkle evenly with the cheese.  Cook, covered, until the cheese melts, about 1 minute.

Weight Watchers: 5 POINTS
Serving Size: 1 chicken breast
