Parmesan-Crusted Tilapia

Tilapia is a farely inexpensive, healthy and delicious fish to use and eat.  It's a white, mild fish that is perfect for those of you who do not like a real "fishy" taste.  I was able to feed our family of 3 1/2 (Julianna is the 1/2 since she's still so young) with two filets totalling $3.26!! 

Ingredients:

*3/4 cup freshly grated Parmesean cheese (I used 1/3 cup)
*2 teas paprika
*1 Tbsp chopped flat-leaf parsley
*4 Tilapia filets (I used just two)
*2 Tbsp olive oil
*1 lemon, cut into wedges for garnish

Directions:

*Preheat the oven to 400 degrees.

*In a shallow dish, combine the cheese with the paprika and parsley, season with salt and pepper

*Drizzle the fish with olive oil and dredge in the cheese mixture and place on a foil-lined baking sheet

*Bake until the fish is opaque in the thickets park, about 10-12 minutes, use lemon to garnish
