Sauteed Green Beans with Garlic

You can make this recipe with really ANY vegetable.  I have even made this with zucchini and asparagus.  Green beans just happened to be on sale this week at Publix, so that's what I used.  Give it a try with any of your familys favorites.

Ingredients:

*2 teas olive oil
*2 teas unsalted butter
*3 garlic cloves, minced
*2 lbs green beans, fresh
*1/2 cup vegetable broth or reduced-sodium chicken broth
*1/2 teas salt
*1/2 teas black pepper

Directions:

*Heat the oil and butter in a large nonstick skillet over medium-high heat.  Add the garlic and cook, stirring constantly until fragrant, about 30 seconds.  Add the green beans; cook, stirring constantly until it begins to soften, about 1 minute.  Add the broth and bring to a boil.

*Reduce the heat and simmer, covered, until the beans are crisp-tender, 6-7 minutes.  Stir in the salt and pepper.

Weight Watchers: 1 point
Serving size: 3/4 cup
